Spirit Release Week

We are very excited to announce the release of our very first spirit this weekend. Join us Friday, May 3 - Sunday, May 5 for a weekend long celebration of this momentous milestone, including tastings of “Seedling” at our new entryway bar, special drawings for a chance to win bottles, and a special performance by The Prickers on Saturday, May 4. For our first release we wanted something that reflected our location, our terroir, and was meaningful personally. We chose to make “Seedling”- a spirit made from only 3 ingredients: Finger Lakes Maple Syrup, yeast and water. The main ingredient in the recipe being Maple Syrup, made 5 miles away from our distillery at Wohlschlegel Maple Farm. As a NYS Farm Distillery our intention is to source as much of our raw materials from within a 100 mile radius, and what’s even more important to us is supporting those farmers that live in our own community .

“Seedling” is much like a Rum, or Rhum Agricole made from Cane Sugar. We rest the spirit in a used bourbon barrel for a few months to help compliment the flavours already in the spirit itself: hints of caramel,butter, toffee,vanilla,baking spices, along with the wood spices, and a lovely butterscotch finish. The oak character inherent with barrel contact makes this a delicious spirit to have on its own, or as a fun spirit to combine with others in a cocktail.
